Chicken Divan

The first recipe – Chicken Divan – is a healthy version of a frequent dinner meal when our three children were younger.  By the way, our two boys did not even notice when their mother changed the recipe to make it more healthy.

Here is the recipe for Chicken Divan:

Ingredients

Nutrition Facts for a Healthier Version of Chicken Divan

  • 16 oz chopped broccoli
  • 4 cooked and cubed skinless boneless chicken breast halves
  • 2 juiced lemons
  • 1 tablespoon of finely shredded lemon peel
  • 1 pint of plain Greek yogurt
  • ¼ teaspoon of black pepper
  • 1/8 cup yellow curry powder
  • 4 oz (or less) shredded cheese

Instructions

  • Cook chicken and broccoli together
  • Drain excess liquid
  • Chop broccoli and cube chicken
  • In a separate bowl, mix lemon, seasonings, and yogurt
  • Combine chicken, broccoli, and yogurt sauce mixture
  • Put mixture into baking dish
  • Top with shredded cheese
  • Bake at 350°F for 35 minutes

Serve with a mixed green salad or your salad of choice
